At Bierbath, we’re always on the lookout for brews that challenge the norm and excite the palate. One such standout is Escape from The Veil, a Brettanomyces-fermented IPA aged in wine barrels by The Veil Brewing Co. in Richmond, VA.
The Brewing Process
This unique ale starts as their house IPA, Master Shredder, which is transferred directly into oak barrels. There, it ferments and matures for a year with a blend of Brettanomyces yeast and the brewery’s house culture. After this period, it’s double dry-hopped with Mosaic and Amarillo hops, resulting in an aromatic profile bursting with clementine, lemon meringue, and a subtle musky fruit character.
Tasting Notes
Pouring a hazy straw gold, Escape offers aromas of fresh orange juice intertwined with Brett-induced funk. The palate experiences a rolling effervescence, drying citrus peel, and a bloomy rind finish.
